Stuffed Tomatoes

Ingredients

  • 2 large tomatoes
  • 30 g button mushrooms, chopped
  • 1 medium onion, diced
  • 1 slice Loprofin Part Baked Loaf (made into breadcrumbs)
  • 1 garlic clove, crushed
  • 1 tbsp olive oil
  • 2 tbsp parsley, chopped

Method

  • Slice the top off each tomato and scoop out the flesh.
  • Fry the mushrooms, onion, garlic and breadcrumbs in olive oil.
  • Season to taste and mix through chopped parsley.
  • Stuff the tomato shells with the mixture, adding additional bread crumbs on top if desired.
  • Grill until the tops are golden.
