- 2 large tomatoes
- 30 g button mushrooms, chopped
- 1 medium onion, diced
- 1 slice Loprofin Part Baked Loaf (made into breadcrumbs)
- 1 garlic clove, crushed
- 1 tbsp olive oil
- 2 tbsp parsley, chopped
- Slice the top off each tomato and scoop out the flesh.
- Fry the mushrooms, onion, garlic and breadcrumbs in olive oil.
- Season to taste and mix through chopped parsley.
- Stuff the tomato shells with the mixture, adding additional bread crumbs on top if desired.
- Grill until the tops are golden.
