Ingredients
- 1 zucchini, cut into 8 pieces
- 8 button mushrooms
- 1 red onion, cut into 8 pieces
- 1 capsicum, cut into 16Â pieces
- 1 tbsp olive oil
Method
- Thread the prepared vegetables onto 4 skewers and lightly brush with oil.
- Grill over medium heat for 8-10 minutes, turning frequently.
- Serve with rice, such as Indian Rice or Fried Rice.
