Bruschetta

Soft, garlicky bread topped with a refreshing mix of tomatoes, onion & basil with a tangy balsamic dressing. Great for a quick snack or Sunday brunch!

Ingredients

  • 2 slices Loprofin Bread sliced
  • 2 tsp Garlic butter TRU-BLUE Garlic Butter Spread from Woolworth's/Coles
  • 1 Ripe tomato diced
  • 1/2 Small onion finely diced
  • 3-4 tbsp Balsamic Dressing Praise
  • Freshly ground back pepper
  • 1 Sprig basil leaves (torn) optional

Method

  • Butter the slices of bread with the garlic butter
  • Warm in the microwave to melt the butter (approximately 30- 40 seconds, depending on your microwave)
  • Meanwhile combine the tomatoes, onion and balsamic dressing and leave to soak for the flavours to mingle
  • Take bread out of microwave and top with the tomato and onion mixture
  • Season to taste with freshly ground black pepper
  • Add torn basil leaves
  • Serve immediately
  • Note: Alternatively, you can make the base crispy by putting the buttered bread under a grill instead using a microwave
